RESEARCH OF RATIONAL CONCENTRATION OF OILSEED CROPS MEALS IN THE SANDY DOUGH SEMI-FINISHED PRODUCT

The work studies the rational concentration of meals of soya, sunﬂower and milk thistle in a sandy dough semi-product for improving healthy properties of ready products (biological value, stomach peristalsis, metabolism, saturation with vitamins and mineral substances). Analytic studies were conducted and advantages of using meals in dough products were determined. The chemical composition of meals was determined, and the optimal composition for satisfying the human need that is in ratio 3:4:3 was calculated. The quality of meals was estimated, and their organoleptic parameters were analyzed. The sensor analysis of sandy semi-products of oilseed crops meals was realized. It was established, that adding of the meal composition instead of ﬂour in amount 20 % is an optimal solution for using in a sandy dough semi-product. There was established the inﬂuence of meals of oilseed crops on organoleptic parameters of developed sandy semi-products. Advantages and defects of using the aforesaid meals were established. Ways of improving the outlook and consistence of shortcakes were offered. Ways of further studies were established.

У статті розглядається вплив підприємств, комунальних господарств на стан прибережної зони Чорного моря. Наводяться результати трирічного дослідження, вказуються причини погіршення екосистеми прибережної зони та рекомендації оптимізації умов господарювання з метою збереження курортної привабливості причорноморської Херсонщини. В статье рассматривается влияние предприятий, комунальних хазяйств на состояние прибрежной зоны Черного моря. Приводяться результаты трехлетнего исследования, указываются причины ухудшения экосистемы прибрежной зоны и рекомендации оптимизации условий хозяйстования с целью сохранения и повышения курортной привлекательности причерноморской Херсонщины. The article deals the influence of the municipal economies on the state of the shore of the Black Sea. The results of the three years investigation are given, the causes of the deterioration of the coastal zone and recommendation of the improvement of the management conditions withy aim of the keeping and increasing of the resort attraction of the coastal zone of the Black Sea of the Kherson region.

В роботі досліджені фізико-хімічні властивості мулу деяких водоймищ трьох районів Херсонської області, які використовуються населенням у вигляді аплікацій без наукового обґрунтування їх лікувальної дії. Отримані в роботі дані хімічного складу грязьових пелоїдів дозволили спрогнозувати їх бальнеологічні властивості та можливість залучення даних джерел в курортологічну карту рекреаційних зон Херсонщини. В работе исследованы фізико-химические свойства ила некоторых водойомов трех районов Херсонской области, которые используются населением в виде апликаций без научного обоснования их лечебного действия. Полученные в работе данные химического состава грязевого ила позволили спрогнозировать его бальнеологические свойства и возможность внесения данных источников в курортологическую карту рекреационных зон Херсонщины. This paper examines physical and chemical attributes of the sludge taken from the water bodies of three districts of the Kherson region. These sludges are used by locals in the form of applique without any scientific evidence of their therapeutic effect. The obtained data set on chemical composition of mud sludge allowed to predict its balneological attributes and the possibility of these springs to be added to the balneological map of recreational areas of the Kherson region.
