    У роботі досліджено теоретичний базис управління раціональною поведінкою споживачів, визначено наукові основи аналізу потреб споживачів та програми формування споживчих переваг, проаналізовано теоретичне підґрунтя процесу формування програм споживчої лояльності, здійснено моніторинг господарської діяльності готельно-ресторанного комплексу із потенційними споживачами. The theoretical basis of management of rational behavior of consumers is investigated, the scientific bases of the analysis of needs of consumers and the program of formation of consumer preferences are defined, the theoretical basis of process of formation of programs of consumer loyalty is analyzed, the economic activity of hotel and restaurant complex with potential consumers is monitored.

    У роботі надано сутність стратегічного планування, його преваги та недоліки, також представлено етапи та методики розробки стратегічних планів діяльності готельних підприємств; було наведено організаційно-економічну характеристику готелю в контексті розробки стратегії розвитку; було досліджено механізм розробки системи стратегічного планування готельних підприємств; наведено напрями ефективності стратегічного планування на засадах підвищення якості готельних послуг. The paper describes of strategic planning, its advantages and disadvantages are given in the work, the stages and methods of development of strategic plans of activity of hotel enterprises are also presented; the organizational and economic characteristics of the hotel in the context of developing a development strategy were given; the mechanisms of development of the system of strategic planning of hotel enterprises were investigated; the directions of efficiency of strategic planning on the basis of improvement of quality of hotel services are resulted.
